Banana Drop Cookies1 1/4 cups sugar2/3 cup shortening 1 teaspoon vanilla 2 eggs unbeaten 1 cup mashed bananas (about 3 bananas) 2 1/4 cups sifted flour 2 teaspoons baking powder 1/4 teaspoon soda 1/2 teaspoon salt 1 cup chopped walnuts 1/4 cup sugar mixed with 1/2 teaspoon cinnamon Cream sugar, shortening and vanilla until light and fluffy. Add eggs and beat well. Stir in mashed bananas. Sift flour with baking powder, soda and salt, add and mix well. Stir in nuts. Chill 30 minutes. Drop by teaspoonfuls 2 inches apart on greased baking sheet. Sprinkle sugar/cinnamon mix over unbaked cookies. Bake in 400 degree oven for 8 to 10 minutes or until lightly browned. Makes about 5 dozen cookies.
Brownies1/3 cup shortening1 cup sugar 2 well-beaten eggs 5 teaspoons cocoa 1 teaspoon vanilla 3/4 cup flour 1/4 teaspoon salt 1/2 teaspoon baking powder 1/2 cup chopped walnuts Thoroughly cream shortening and sugar. Add eggs and beat. Sift flour, salt, and baking powder and add. Stir in walnuts and vanilla. Bake in 350 degree oven about 25 minutes.
Chocaroons1/4 teaspoon salt2 egg whites 1 cup sugar 1/2 teaspoon vanilla 1 cup shredded coconut 2 cups Corn Flakes 1 cup (6 ounce package) semi-sweet chocolate chips 1/2 cup finely chopped walnuts (optional) Add salt to egg whites, beat until eggs are frothy. Beat in sugar 2 tablespoons at a time. Add vanilla. Gently stir in coconut, Corn Flakes, and chocolate chips. Add optional chopped walnuts if desired. Drop by teaspoonfuls on greased cookie sheet. Bake in 300 degree oven for 18 to 20 minutes.
Coffee Cake1 cup sugar2 tablespoons shortening 1 egg 1 teaspoon vanilla 2 cups flour * 3 teaspoons baking powder * 3/4 cup milk 1 cup chopped walnuts 2 tablespoons sugar mixed with 1 teaspoon cinnamon butter (as required) * use rounded measurement (not level) for flour/baking powder Cream sugar and shortening. Add egg and vanilla. Sift flour with baking powder. Mix all together with milk. Add nuts. Pour into greased 10 inch round cake pan. Dot top of unbaked cake with butter and sprinkle sugar/cinnamon mix. Bake in 350 degree oven for 28 minutes.
Pistachio Dessert Salad20 ounce can crushed pineapple1 small package instant pistachio pudding mix 1/4 to 1/2 cup chopped walnuts 1/4 to 1/2 cup frozen (or fresh) blueberries 2 to 3 cups miniature marshmallows (half a 16 ounce package) 12 to 16 ounce frozen whipped topping Set whipped topping out to thaw. Mix pineapple with pistachio pudding. Mix in nuts, berries, marshmallows, then mix in thawed whipped topping. Refrigerate until ready to eat. Mix in a cut up apple or banana or other fresh/frozen/canned fruit. This makes an easy dish for potluck dinners.
Swedish Cookies1 pound butter (or margarine)4 cups flour 1 cup powdered sugar 1/2 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon vanilla 1 cup finely chopped walnuts In a large bowl, beat butter until softened. Add sugar, baking powder, salt, vanilla and about half of the flour. Beat until thoroughly mixed. Stir in remaining flour. Then stir in walnuts. Shape dough into 1 inch balls. Place 1 inch apart on ungreased cookie sheet. Bake in 350 degree oven for 12 to 15 minutes or until edges are firm and the bottoms are very lightly browned. Remove cookies and cool slightly on wire rack. In a paper or plastic bag gently shake a few cookies at a time in sifted powdered sugar. Then cool completely on wire rack. Makes about 6 dozen cookies. |
